Autumny Cupcakes

I baked a few very autumnal themed cupcakes yesterday!

How are you?

My brother and I have been baking very cute and autumn themed cupcakes (that also tasted great by the way!) so I wanted to show you the recipes. The cupcakes may not be the healthiest option but I can manage with a few extra calories every now and then if they taste as good!

#3Canon EOS 600D (28mm, f/4, 1/15 sec, ISO3200)

What you will need:

For the cakes:

125g butter
125g sugar
1 pack of vanilla sugar
2 eggs
200g of flour
50g almonds
1 pinch of salt
2 tablespoons of baking soda
milk

Mix the butter, sugar, eggs, vanilla sugar and salt. Mix the flour, almonds and baking soda and add to the mixture. Add a bit of milk to keep the dough smooth.
Bake for 20-25 minutes at 180°C with circulating air.

For the frosting: 

100g of butter
100g of cream cheese
100g of powdered sugar (you can use less, it’s going to be really sweet)
1 vanilla

Just mix everything together. I divided the frosting into two parts and added red and orange food colouring, just to make everything look a little more autumnal. Apply the frosting to the cupcake and then decorate with your favourite (in my case very autumnal) cupcake decorations! I found the decorations and tins at a 1€ store so having a look there might be rewarding to have a look there!
